Easy Roasted Tomato Soup Recipe

Creamy tomato soup has always been one of my favorite soups growing up—especially with a gooey grilled cheese on the side. For years, I only knew the canned version, and I thought that was as good as it got. But once I tried making it from scratch with fresh, ripe tomatoes, everything changed. The flavor of this homemade tomato soup is richer, fresher, and so much more satisfying—there’s truly no going back!

Ingredients for Roasted Tomato Soup

  • Fresh tomatoes – You can really use any tomatoes that you have on hand, and this is perfect way to use your abundance of summer tomatoes from your garden. I love using heirloom tomatoes, but Roma tomatoes, or even cherry tomatoes, work great. 
  • Onion – I like to use yellow onions for the slight hint of sweetness, but you can also use a white onion. 
  • Garlic – Fresh garlic cloves roasted add so much flavor to the soup. 
  • Olive oil – To roast the vegetables, you will coat them in olive oil. This also helps add richness to the soup. 
  • Seasoning – You will need Italian seasoning, dried basil, salt (I like Redmond Real Salt), and black pepper. If you have fresh basil feel free to use that instead of dried. 
  • Bone broth – I like to use bone broth for added protein and minerals, but you can also substitute it for regular chicken broth or vegetable broth for a vegetarian option. My favorite bone broth is Fond. (use this link for 10% off)
  • Heavy cream – The heavy cream adds richness and creaminess to the soup that is so delicious! For a dairy-free option, I would recommend using full-fat coconut milk. 

Instructions to make the Easy Roasted Tomato Soup recipe

Step 1

Preheat the oven to 400°F. 

Cut the tomatoes and onion into quarters and place on a rimmed sheet pan along with the garlic cloves. 

Add seasoning to sliced tomatoes, garlic and onion.
Step 2

Sprinkle the vegetables with olive oil and seasoning and toss to combine.

Step 3

Bake for 35-40 minutes or until the vegetables are soft. If you want some caramelized or charred bits, you can put the sheet pan under broiler for a few minutes.

Add the vegetables to a large pot or blender and add the bone broth.

Step 5

Either blend with an immersion blender in the pot or blend in a blender until smooth. (If you are using a regular blender be sure to let the vegetables cool before blending.)

Add the soup to the stove top over medium heat to warm it through. Once the soup starts to boil, add the heavy cream and stir to combine. Remove from the heat and add more salt if desired. 

Recipe tips

  • I find the natural sugars from the roasted tomatoes, onion, and garlic to be enough to balance the acidity of the tomatoes, but if you would like to add a little more sweetness, add in a tablespoon of sugar or honey. 
  • Be sure to use a rimmed baking sheet so that the juices from the tomatoes do not run off the pan.
  • Use an immersion blender to make it super easy to blend and create fewer dishes. 
  • Serve the homemade tomato soup with a grilled cheese sandwich or crusty bread for the ultimate comfort food. 

How to store Roasted Tomato Soup

To store the soup, add to an airtight container and store in the fridge for 3-5 days. To reheat, either add it to a bowl and microwave or add it to a pot over the stove until warmed through. 

To freeze, cool the soup completely and then add to a freezer-safe container. Freeze for up to three months.

  • 5-6 Large tomatoes
  • 1 yellow onion
  • 6 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
