Lavender Simple Syrup – Three Ingredient Recipe
This aromatic Lavender Simple Syrup pairs great with coffee, tea, or cocktails. With only three ingredients, this recipe is super simple to make.
I was inspired to create this recipe by my love for lavender lattes, whenever I see one on a coffee shop menu, I always order it! I wanted to take my love for it and make a healthier version to make at home using only dried lavender, honey, and water.
There are many lavender syrups on the market, however many of them are full of not-so-great ingredients or do not even contain real lavender in them! It is worth it to make it at home to not only get the lavender flavor but also the benefits of lavender! Health Benefits of Lavender
Many people know lavender for its relaxing effects. It is one of the most popular scents for candles or self-care items such as bath salts. But, lavender doesn’t stop there! It actually has many health benefits, making it one of my favorite medicinal herbs! Lavender has been shown to relieve anxiety and depression, aid in sleep, and help with ailments such as headaches. (Learn more about holistic remedies to reduce anxiety here.) It can be therapeutic as an essential oil through aromatherapy or consumed in a tea. Lavender is one of my favorite flowers in my garden. It brings a beautiful pop of color, and an amazing scent, and is loved by bees!
Tools to make the Lavender Simple Syrup
The main tool you will need is a fine mesh strainer to remove the dried lavender after steeping. This strainer is 9” and you can use it for multiple uses! (I love to use this size for rinsing my rice!)

Ingredients to make Lavender Simple Syrup
Dried Lavender– it is important to use culinary, or food-grade lavender for this recipe. I also recommend using organic to reduce your exposure to chemicals or pesticides. I used this brand that I purchased off Amazon. It’s a large bag so you can get many uses and it’s third-party tested for chemicals.
Honey – I love using honey instead of white sugar because it is a natural sweetener and is anti-inflammatory, antioxidant, and antibacterial.
Water- Filtered water
Instructions on how to make:
For the first step, you are essentially making a very strong lavender tea.
Add water to a pot and heat until it is almost at a simmer. Add in dried lavender and cover with a tight-fitting lid. Covering while steeping is important to not lose any of the aromatic compounds.
Steep for 5-10 minutes. While testing this recipe I tried longer steeping times, but found that if you steep too long the tea will taste bitter.
After 5-10 minutes, pour through a fine mesh strainer into a cup or jar. Use a spatula to gently push down on the lavender to release all of the liquid.
Add the tea back to the pot and add in honey. Gently heat until honey has dissolved and it is fully incorporated.
Pour into a jar for storage and keep in the fridge for future use. The simple syrup can last in the fridge for up to one month. This recipe will fit perfectly in a half-pint mason jar!
Uses for Lavender Simple Syrup
My favorite way to use this Lavender Simple Syrup is in a Lavender Latte, but it is wonderful in your favorite tea, added to lemonade, or in a cocktail or mocktail. Use it just as you would any other sweetener and have fun with it!

Ingredients
- 1/4 cup dried lavender
- 1/2 cup filtered water
- 1/2 cup honey
Instructions
1. Add water to a pot and heat until it is almost at a simmer
2. Remove the pot from the heat and add in dried lavender. Place a tight-fitting lid on top.
3. Steep for 5-10 minutes
4. Place a fine mesh strainer over a cup or jar and then pour liquid through the strainer. Use a spatula and gently push down on the lavender to remove all of the liquid.
5. Add the liquid back to the pot and add in the honey. Gently heat until the honey has completely melted and it is fully combined.
6. Pour into a jar for storage and keep in the fridge with a tight-fitting lid. The syrup stays good for about 1 month.
7. Use 1/2-1 tablespoon of syrup to sweeten your favorite drinks.
