1. Add water to a pot and heat until it is almost at a simmer
2. Remove the pot from the heat and add in dried lavender. Place a tight-fitting lid on top.
3. Steep for 5-10 minutes
4. Place a fine mesh strainer over a cup or jar and then pour liquid through the strainer. Use a spatula and gently push down on the lavender to remove all of the liquid.
5. Add the liquid back to the pot and add in the honey. Gently heat until the honey has completely melted and it is fully combined.
6. Pour into a jar for storage and keep in the fridge with a tight-fitting lid. The syrup stays good for about 1 month.
7. Use 1/2-1 tablespoon of syrup to sweeten your favorite drinks.
