Cajun Sausage, Potato and Vegetable Sheet Pan Dinner

This Cajun Sheet Pan Dinner is a healthy, easy, and quick dinner! It is made with simple ingredients and is gluten-free and dairy-free. It is filled with colorful veggies, flavorful Andouille sausage, and a cajun seasoning blend. 

Lately, I have really been leaning on easy sheet pan meals. I love to cook, but some days are just so busy I don’t have time to be in the kitchen very long. I love that I can just add the sheet pan to the oven and walk away. And the best part is there is just one dish to clean up afterward! This sausage sheet pan recipe has been on repeat for busy weeknights, along with this Maple Dijon Glazed Sausage and Veggie Sheet Pan Dinner recipe. This recipe was inspired by my Chicken and Sausage Gumbo recipe and uses many of the same ingredients. This version, however, is much quicker and easier to make!

Healthy doesn’t mean boring or complicated

One of the biggest keys to eating healthy is making meals that are both easy and delicious! One-pan meals are a great way to check all the boxes! Sheet pan meals are a favorite because they require minimal prep and then you can place it in the oven and walk away. However, I also love recipes where you can throw everything together in one skillet such as Egg Roll In A Bowl, or Ground Beef and Broccoli. And don’t forget about Instant Pot meals for easy recipes! Yes! This recipe is both gluten-free and dairy-free. It is also grain-free and paleo-friendly.

Meal prep ideas

This is a great recipe to make ahead to easily reheat for lunch or dinner. Or, if you want to just cut down on the time that you need to take to make a fresh dinner, pre-slice all of the ingredients so all you need to do the night of is dump everything on a sheet pan and put it in the oven. I would recommend slicing the sausage, peppers, onions, and potatoes and storing them in the fridge. Then, when you are ready to make dinner, throw all of the chopped ingredients on a sheet pan, drizzle with oil, add the seasoning, and toss to coat. Then place it in the oven, and dinner will be ready in a breeze!

Tools to make this easy sheet pan meal

The main tool you will need to make this recipe is, of course, a sheet pan or large baking sheet. You will need to use a pan that has at least a one-inch rim to prevent the sheet pan from leaking into the oven. My favorite sheet pans are these non-toxic stainless steel sheet pans. Traditional nonstick sheet pans have a coating on them that is made out of a toxic material. I love these pans because they are made from stainless steel, and I also have not had any issues with food sticking to them. If you’d like, you can line the sheet pan with parchment paper, but I don’t really find a need to! 

Ingredients to make cajun sheet pan dinner

Ingredients for the Cajun Sheet Pan dinner 

  • Andouille sausage – My favorite brand is Aidells Cajun Andouille Sausage. Be sure to pay attention to the ingredients in the sausage and get one that does not have nitrates or nitrites.
  • Bell peppers – A mix of red and green bell peppers cut into strips. 
  • Onion – I like to use a yellow onion because it is slighter sweeter, but you could also use a white onion. Cut the onion half once, and then cut strips. 
  • Red potatoes – You could also use baby potatoes or yellow potatoes if that is what you have on hand. You will want to make sure to cut the potatoes into small bite-sized pieces. The larger the potatoes are, the longer the sheet pan will need to be in the oven so you do not want to leave the potatoes too big. 
  • Avocado Oil – A little oil is used to cover the sausages and veggies. I like avocado oil, but you could also use olive oil instead. 
  • Cajun seasoning – This recipe calls for a tablespoon of the cajun seasoning which gives the dish a slight kick. You can adjust the cajun seasoning based on your spice preference. I buy a seasoning blend from the grocery store so I don’t have to make my own. The blend will include cajun spices such as cayenne pepper, paprika, oregano, and black pepper. I love having spice blends like this around because they add so much flavor 
  • Additional seasoning – Garlic powder and salt. I like to use a mineral-rich salt such as Redmond Real Salt.

How to make the Cajun Sheet Pan Dinner

Preheat the oven to 400F degrees 

Prepare the vegetables by slicing the onions and bell peppers into strips. Next, Cut the potatoes into bite-sized pieces. Keep in mind that you want to cut smaller/thinner pieces so that the potatoes will roast within 30 minutes. I cut mine to be about the same size as the sliced sausage. If the potatoes are too big, it will take longer to roast. Then, cut the sausage into quarter-inch coins. 

Next, add the ingredients in a large bowl and drizzle with avocado oil, and add the seasoning. Toss to evenly combine then place on a sheet pan. Alternatively, instead of adding to a bowl, add everything directly to the sheet pan and toss all the ingredients around to coat in the seasoning. 

Bake in the preheated oven for 30 minutes or until the potatoes are tender.

How to store leftovers

To store leftovers, add them to an airtight container and keep in the fridge for up to 4 days. 

Can this recipe be made with any other protein?

Sure! If you want to add another protein or substitute for the sausage you definitely could. Some ideas include chicken sausage, cubed chicken thighs, or large shrimp. Just note that the cooking time could vary if you need to ensure the meat is cooked all the way through.
