Prepare the vegetables by slicing the onions and bell peppers into strips. Next, Cut the potatoes into bite-sized pieces. Keep in mind that you want to cut smaller/thinner pieces so that the potatoes will roast within 30 minutes. I cut mine to be about the same size as the sliced sausage. Next, add the ingredients in a large bowl and drizzle with avocado oil, and add the seasoning. Toss to evenly combine then place on a sheet pan. Alternatively, instead of adding to a bowl, add everything directly to the sheet pan and toss all the ingredients around to coat in the seasoning.1 tablespoon avocado oil, 1 tablespoon cajun, 1 teaspoon garlic powder, 1 teaspoon salt
Bake in the preheated oven for 30 minutes or until the potatoes are tender.

To store leftovers, add them to an airtight container and keep in the fridge for up to 4 days.
