This meal prep takes chicken breast and divides it into three different meals that taste completely different! They take less than 15 minutes to whip up and are all anti-inflammatory, paleo, gluten-free, and dairy-free.

First: Meal Prep
For this meal prep, you will need about 45 minutes. It could take even less if you are good at multitasking! You will prep the chicken, chop all your veggies, and assemble the sauces. Doing this prep ahead of time helps you create dinners for the next three nights in about 10-15 minutes with little effort!
Meal one: Buffalo Chicken Tacos
For this meal, all you need to do is heat up the chicken and assemble the tacos! You will add buffalo sauce to the chicken and then layer the gluten-free tortilla with buffalo chicken, veggies, avocado, and dairy-free ranch.
Meal two: Veggie Stir Fry
Making the stir fry is so easy to do! Everything is prepped ahead of time and you just dump everything into the pan and cook! Then you can top with hot sauce and sesame seeds if desired and boom, dinner is done!
Meal three: Bruschetta chicken & Zucchini
Balsamic quick-marinated tomatoes and basil cover the chicken on a bed of lettuce. Then a warm side of garlic zucchini is served on the side. All you need to do is cook the zucchini and prep the salad while the zucchini is cooking.
