- Avocado oil – I like avocado oil for its neutral flavor, but you can also substitute it for olive oil.
- Ground pork – Ground pork gives this dish great flavor because of its fat content. You can also substitute for other types of ground meat, such as ground chicken or ground turkey.
- Garlic- Fresh garlic adds a ton of flavor to the dish. If you want to keep it easy you can also substitute for 1 teaspoon of garlic powder.
- Coleslaw mix – 1 bag of coleslaw mix is all you need for this recipe. Using the pre-shredded bag from the grocery store makes this recipe super simple! I like the blend with cabbage and carrots or you can also use a broccoli slaw mix too. If you want to shred your own cabbage, you will need about 5 cups of cabbage for this dish.
- Ground ginger – I like to use ground ginger to keep this recipe super simple. You can also use fresh ginger, but I don’t typically have that on hand, so I opt for what is easy.
- Coconut aminos – If you do not want to use coconut aminos, you can substitute for low-sodium soy sauce, but I would reduce the amount to about one tablespoon.
- Salt – To season and bring out the flavors. I like Redmond Real Salt.
- Rice – I like jasmine rice the best, but you can use whatever type you’d like. White rice or brown rice both work great! You can also substitute for cauliflower rice if you would like this dish to be low-carb or grain-free. Pro tip: get the frozen organic jasmine rice from Trader Joe’s that you can microwave to make this even easier!
- Optional toppings: green onions, sriracha sauce, red pepper flakes or sesame seeds.
How to make Egg Roll In A Bowl
First, heat a large skillet over medium heat, and once the pan is hot, add avocado oil. Add the ground pork and cook until browned and almost completely cooked through about 5-7 minutes. If there is excess grease in the pan, remove the grease with a spoon.
Next, add the minced garlic and sauté for about 1-2 minutes or until fragrant. Add the ground ginger and salt and stir to combine.
Then add in the coleslaw mix and coconut aminos . Cook until the cabbage is wilted and the ground pork is cooked through, about 4 minutes. I like it to still be a little crunchy, but if you want it softer you can cook it longer until your desired texture.
Serve with rice or cauliflower rice and sprinkle with green onions and sriracha if desired and enjoy!
