This Egg Roll In A Bowl is a one-pot recipe that is done in under 20 minutes. It is a quick and easy recipe that is filled with ground pork and crunchy cabbage and flavored with garlic, ginger, and coconut aminos.
First, heat a large skillet over medium heat, and once the pan is hot, add avocado oil. Add the ground pork and cook until browned and almost completely cooked through about 5-7 minutes. If there is excess grease in the pan, remove the grease with a spoon.
Next, add the minced garlic and sauté for about 1-2 minutes or until fragrant. Add the ground ginger and salt and stir to combine.
Then add in the coleslaw mix and coconut aminos. Cook until the cabbage is wilted and the ground pork is cooked through, about 4 minutes. I like it to still be a little crunchy, but if you want it softer you can cook it longer until your desired texture.
Serve with rice and sprinkle with green onions and sriracha if desired and enjoy!
