Oh how naive pre-baby me was 😂 Coming into postpa Oh how naive pre-baby me was 😂

Coming into postpartum I truly had no idea how hard dinner would be. 

Not only am I doing it one handed with a baby on my hip most of the time, the mental and decision fatigue you feel as a mom, sometimes I just can’t with dinner. 

Before having a baby I would have told you to try to meal prep on the weekends, meal plan, or prep while your baby naps. 

Now I just laugh at all that 😂

I’m a nutritionist and cook for a career, and yet it still feels exhausting most days…

But I’m also determined to figure out a good system and how to help other moms get healthy meals on the table.

This was so easy it’s def going to be on repeat! This was so easy it’s def going to be on repeat!

Roasting a whole chicken is super easy and makes the best chicken ever. No more dry boring chicken breast! 👀

I think my favorite part is that this makes multiple meals and it makes it so I don’t have to think about dinner for a couple days 😍 (easy + budget friendly!)

Once most of the meat is gone I’ll take the bones and make bone broth and soup. Should I share how I make that too? 

Recipe 👇🏻 🍗

Ingredients:
1 whole chicken
3 tbsp olive oil
½ tsp each garlic powder, onion powder, thyme, rosemary + sage
1 tsp salt
¼ tsp pepper

Directions:
Mix the olive oil and seasonings together. I eyeballed the seasonings, so these measurements are approximate! You could also use whatever seasoning you’d like. Rub all over the chicken, making sure to get some under the skin too.

Bake at 400°F until the internal temperature reaches 165°F. Mine took about 1½ hours, but this will depend on the size of your chicken, so I always recommend using a meat thermometer!

Cucumber & tomato salad: 
- I used Italian seasoning & balsamic vinegar for a pop of flavor 

Kale 
- sautéed with garlic & lemon juice (SUCH a yummy combo and so nutrient dense!)

Mushrooms 
- sautéed in the same pan as the steak to pick up the flavor and then added butter and garlic 

Steak
- our favorite seasoning is actually really simple. Just salt, pepper and garlic powder. But it’s def key to not overcook it for the best flavor & texture (use a meat thermometer!!)

It’s definitely not hard to cook like this, but I also think it’s a skill that takes practice! Once you get some practice in, it becomes more second nature ☺️

Meals can be easy, but also packed with flavor!

As a busy mom, a panty stocked with ingredients that I can easily whip up dinner with is key! And I always have @organicville sauces for that exact reason! 😍

They are organic, made with simple ingredients, have 0g added sugar and seed oil free!!!

Zucchini boat recipe:

Ingredients 
- 4-6 zucchini 
- Olive or avocado oil
- Salt, pepper, Italian seasoning, garlic powder
- 1 pound ground beef
- 1 jar @organicville marinara or Italian Herb Pasta sauce 
Instructions 
1. Cut the ends off the zucchini and then cut in half length wise. Hollow out the inside of the zucchini using a spoon
2. Add zucchini to a sheet pan, drizzle with oil and sprinkle with seasoning.
3. Bake in a 400 degree oven for 20 minutes or until easily pierced with a fork 
4. Meanwhile, brown the ground beef in a skillet over medium heat. Drain excess fat.
5. Pour in a jar of OrganicVille pasta sauce and simmer until the meat is cooked through 
6. Remove the zucchini from the oven and spoon the meat and sauce mixture until the hallowed out space 
7. Optional: add cheese on top and add back to the oven until melted
