Ingredients to make Roasted Garlic Mashed Potatoes

  • Roasted garlic- The not-so-secret secret ingredient to the best ever mashed potatoes! You will need one whole head of garlic roasted in the oven.
  • Yukon gold potatoes – I love Yukon gold potatoes because they make a really soft and creamy mashed potatoes. They have thin skins as well so you can leave them on if you’d like. I like to leave the skins to add some texture, but if you want a smoother consistency, peel the skins before dicing. You can also use red potatoes if you prefer.
  • Butter – The butter adds richness and creaminess to the mashed potatoes.
  • Heavy cream – The heavy cream makes these mashed potatoes so creamy and delicious! If you want the mashed potatoes to have a lighter feel you can substitute with milk.
  • Salt & pepper – to taste. I like to use a mineral-rich salt such as Redmond Real Salt

How to make Roasted Garlic Mashed Potatoes recipe

First, roast the garlic. To do this, take one whole head of garlic and cut that top off to expose the garlic cloves inside. Drizzle with about 1 teaspoon of olive oil and wrap tightly in foil. Add to a 400 degree f oven for 50 minutes. I like try to do this a couple of hours or so ahead of time so you can give the garlic head time to cool off before adding to the mashed potatoes so it is easier to handle.

Before and after roasted garlic

Dice the potatoes into 1 inch cubes and place potatoes in a large pot. Fill with cold water about an 1inch or so above the potatoes. Add to the stove top and bring to a boil and boil for 15-20 minutes or until the potatoes are fork tender.

Pot with diced potatoes

Drain the potatoes and add to a large bowl. To mash the potatoes, you can use an electric hand mixer, hand masher, potato ricer, or a stand mixer. I personally like to use my stand mixer because it is so easy to use!

Cooked potatoes before being mashed

Add the butter and milk to a medium saucepan and heat on low heat until the butter is melted. This step helps ensure the butter is fully melted and it will keep the potatoes warm (rather than adding in cold liquid and cooling them down.)  Add the melted butter and milk to the potatoes. Then, take the head of garlic and squeeze out the garlic cloves. You can first add them to a small bowl and mash, or just add them directly in with the potatoes if you want bigger chunks.

Season with salt and pepper and then mix all the ingredients together until the potatoes are mashed and creamy. I like to leave it a little chunky, but you can mixed until your desired consistency. Be careful not to over mix though. This will create a gummy or gluey texture.

Add to a serving bowl and serve. Top with gravy if desired and enjoy!

How to store

To store leftover mashed potatoes add to an airtight container and store in the fridge for 3-5 days. Mashed potatoes also freeze well so if you’d like you can freeze leftovers for another time! Just add to a freezer safe container and freeze for up to 3 months. To defrost just add to the fridge and then warm in the microwave.
